Mokolua Margarita


My stint in the islands has caused me to rethink - some of the ingredients in my favorite blender drink. After a long arduous day of sunning on the sand - I revised my concoction and came up with a plan. Why not try a tropical spin on my salty Mexican fave? By adding island ingredients you can be surf the Mokolua Margarita wave!!

Mokolua Margarita

1 1/2 cups fresh pineapple chunks

3/4 cup fresh lilikoi juice

1/4 cup fresh lime juice

1 cup tequila

1/2 cup cane sugar syrup

Hawaiian salt

Add pineapple, lilikoi juice, lime juice, tequila and cane sugar syrup to a blender. Blend until smooth, then add 3 cups of ice and blend again. Run a lime wedge around the rim of a saucer and dip into coarse Hawaiian sea salt. Fill up thy cup and sip down the aloha!
